This pasta is made organically with the ancient strain of durum wheat called Senatore Cappelli, which has recently been rediscovered and is grown on the Spighe Toscane farm.
Senatore Cappelli was commonly used at the beginning of the last century, prior to the industrialization of agriculture, and as such it has not undergone modifications to increase crop yields.
The organic semolina is kneaded with cold water, it undergoes extrusion using bronze plates and is then dried. In no phase of processing does the temperature exceed 38 °C. This is important to preserve both the nutritional properties and the flavor of the pasta.
