In October 2015, Tenuta San Carlo started the multi-year transition to certified organic production. They follow strict organic regulations and do not use chemical herbicides, pesticides, or fungicides to grow their rice. Instead, they start preparing the fields months before planting to naturally fend off weeds and other potential obstacles to a healthy harvest. They use cover crops and crop rotation to improve soil quality and fertility.
They process their rice with the same attention to detail that they apply to production.
The rice is produced using an artisanal stone processing method, perfected over many years. This process results in whole and uniform rice kernels that maintain their quality during cooking.
